Dumplings & Pie
Welcome back! I can't believe it has been so long since our last post! Summer has taken over and we have been SO busy but are ready to get back into the swing of things (fingers crossed). Ryan and I found out we are expecting our first little one this coming December so all free time has been spent trying to somewhat prepare for that new adventure! I have had major food aversions from meat so I haven't been cooking a lot of homemade meals in the last couple of weeks but I am hoping to change that since I am now feeling a lot better during the second trimester.
Tonight I got home and decided to make homemade Chicken & Dumplings along with Blueberry Banana Pie. My grandma has always made this pie and I always loved when she had leftovers sitting in her fridge when I went to her house. It is so delicious!
Chicken & Dumplings
4 cups chicken broth
1 can cream of chicken
1 cup water
1 cup milk
dash of salt & pepper
3-4 shredded chicken breasts
You can do this in the crockpot and use cut up biscuits if you are really short on time. Just add everything (except biscuits) into crockpot and set on low for 4-6 hours. An hour before serving cut up your biscuit dough into small pieces and put in crockpot. Let simmer for an hour and eat it up.
If you are not using a crockpot, place everything into a large pot and let simmer for an hour or so.
Tonight I used our homemade biscuit recipe to make the dumplings and just got them into small squares. You can find that recipe here. Cover the dumplings in flour and drop them into the chicken broth mix. Cover the chicken and dumplings and let sit for thirty minutes. Serve & enjoy!
Banana-Blueberry Pie
8 oz cream cheese
1-2 cups whipped cream
1 cup powdered sugar
2-3 bananas sliced
1 can blueberry pie filling
1 graham cracker pie crust or regular pie crust
Cream the powdered sugar, whipped cream and cream cheese together. Spread half into pie shell (make sure it's cooked if using a regular pie shell). Slice bananas onto the top of it and then add another layer of the mixture on top of the bananas. Chill in the refrigerator for about an hour. Top with a can of blueberry pie filling and whip cream when ready to serve. I added a few more bananas to the top of mine just because I like the way it tastes with it better.
For this pie I did not have blueberry pie filling on hand so made my own. Here is the recipe for that if you are interested.
Blueberry Pie Filling
4 cups blueberries
1/4 cup water
1 cup sugar
2 tbsp lemon juice
2 tbsp flour
1 tsp cinnamon
Place all ingredients in stove top pan and cook on top of stove over medium heat stirring continually until it is hot and mixed well. The consistency should be like one of a pie filling. Note: blueberries will not be completely dissolved.
