It's technically summer for me which means more time for cooking and new recipes!
We've had these recipes ready for a while, we just hadn't had the time to sit down and blog them.
Anyone who lives in Kentucky or is from Kentucky knows how important the Derby is there every spring, so we are bringing you a few of our favorite recipes for Derby Day!
Kentucky Hot Browns & Derby Pie
The recipe for hot browns is super easy if you have all the ingredients on hand!
What you will need:
Bread
Bacon
Chicken/Turkey
Tomatoes
Assemble these by placing a piece of bread on a greased baking sheet, then add shredded chicken/or turkey on each piece. Break the {cooked} bacon into half and place over chicken. I am not going to give amounts on any of those as you can make however many you want or need for your family! I can tell you however to make 10, I use one small chicken, one package of bacon and 10 slices of bread. My mom will normally use leftover turkey to make these the next day, it's whichever you prefer.
One ingredient you don't want to leave out is the homemade cheese sauce, it sends these hot browns over the top!
Homemade Cheese Sauce:
1/4 cup butter
2 tbsp. all purpose flour
3/4 tsp salt
1/8 tsp pepper
1 1/2 cups milk
1 pound shredded cheese (american or cheddar)
In a saucepan melt the butter and then add the flour, salt & pepper. Stir to make a smooth paste. Gradually add the milk while stirring constantly. Bring to a boil and stir for one minute. Add cheese and stir just until it is melted. Pour over your assembled hot browns and bake on 375 for about 6 minutes. We also like to cut up some tomatoes to eat with our hot browns, they go along perfect!
Now comes dessert, my favorite part of every meal!
Derby Pie:
3 eggs
1/2 cup white sugar
1 cup white corn syrup
1/8 tsp salt
1 tsp vanilla
1/4 cup butter
1 cup pecans
1 cup chocolate chips
Beat the eggs, sugar, syrup, salt, vanilla, and melted butter. Add pecans and chocolate chips to unbaked pie shell. You can make a homemade pie shell or just buy a mix, or frozen one for this recipe. Pour the mixture over the pecans and chocolate chips and stir just a little bit. Bake at 350 degrees for 50 minutes.
