We are back and hoping to slowly start posting some recipes. A lot has happened in the past year (like graduating college, giving birth to the sweetest baby girl and my mom becoming a granna!), but we are excited to share some more recipes with you. My mom has been doing a lot of Trim Healthy Mama recipes that we may share and I (Kelsey) have been doing some of the 21 day fix approved recipes that are tweaked that I will share some of when we make them. School is right around the corner to start up so we will be sharing a lot of easy meals and desserts for the weeknights that you don't have a lot of time to cook.
Buffalo Chicken Pizza!
I love to make my own homemade pizza crust, but my husband is not a fan, so I chose to purchase some pre-made ones from Aldi. They were awesome and saved so much time but you can still do a homemade one with this recipe and it is still super simple. Homemade recipe can be found here, along with a variation of this pizza. Note: Aldi also has gluten-free crust mix as well if you do not do gluten.
Ingredients:
To season chicken: garlic powder, cayenne & chili powder (I just kind of eye the amounts)
1 cup spinach
1/2 cup ranch dressing
1/2-1 cup shredded cheese
1/3 cup Franks hot sauce
1 can of tomato sauce or you can use pizza sauce
1 tomato (optional)
Slice two chicken breasts, season & then cook in skillet. Once cooked add about a cup of spinach to soften before placing on pizza.
On the crust, spread tomato sauce, then drizzle the ranch dressing. If your looking for a ranch dressing that is a little better for you, this one is yogurt based and so yummy.
Take the chicken and coat it in the Frank's hot sauce. Spread the chicken and spinach onto the pizza. Then sprinkle the cheese and add sliced tomato if you want (I chose not to because again, husband doesn't like tomatoes).
Bake on 400 for 8-10 minutes.
