Sometimes when I am not in class until late I enjoy actually cooking dinner for Ryan and I!
With finals coming up, and the school year being close to done I am feeling very overwhelmed and busy but it is always nice to get in the kitchen, even it it's just for a simple dinner.
This next recipe is Garlic Lover's Chicken and it is a staple to put into your recipe book. I made some red potatoes and some steamed carrots with it too and had a meal!
Garlic Lover's Chicken
1/2 cup dry bread crumbs
1/2 cup grated parmesan cheese
1 1/2 TBSP minced fresh parsley
1/2 tsp salt
1/8 tsp pepper
1/4 cup milk
6 boneless chicken breast halves
5 TBSP melted butter
1-2 garlic cloves-minced
2 TBSP lemon juice
2 TBSP paprika
In a large resealable bag combine bread crumbs, parmesan, parsley, salt & pepper.
Place milk in a shallow bowl & dip chicken in milk then shake in crumb mix. Place the chicken in a 13x9 baking pan.
Combine butter, garlic & lemon juice. Drizzle over the chicken then sprinkle with paprika.
Bake uncovered at 350 degrees for 25-30 minutes or until the juices run clear.
If you are wondering for the red potatoes all I did was dice them up then cook them on 375 for 45 minutes covered and then 15 more uncovered. I added a little bit of olive oil and this heavenly stuff.....
